I work with sensitive materials and would like to add a notice of privacy that at least some of my outgoing e-mails. Is it a slap, that I come with a push of a button?

Perhaps you could as a signature in Tools / Options / Signature.

You can insert a signature in the table if you use Outlook.
can be done by pressing the OFA, but you can add a signature to outgoing messages.
Look for the words "signatures" to help the program's documentation, e-mail that you are using.
